Shrimp Scampi with Zucchini Noodles is a great delicious alternative to the traditional dish with real pasta loaded with flour and carbs. If you ve never had zucchini noodles, they are delicious and nutritious! This will please even the pickiest eaters in your house.
The term scampi actually has different meanings and preparations around the world. In the UK, it can refer to the lobster out of the shell that is fried in bread crumbs or batter and served with chips and/or tartar sauce.
The preparation we are familiar with here in the United States, is with white wine, lemon, butter, fresh herbs, and usually shrimp, although chicken, or other types of fish can be used.
Here we are using zucchini noodles in place of the regular spaghetti or other pasta. I highly recommend getting a julienne peeler. You can find them in most kitchen stores, and probably even Walmart or Target nowadays, and they are affordable and will save you an incredible amount of time!
This recipe is really a perfect Italian/American scampi. Try and follow the directions exactly. Take the time to get your mise en place together so you are not scrambling to get stuff in the middle of the preparation. It will really pay off if you do it the right way.
*Chef Dennis Tip: Most people think you can just use a cheap wine you wouldn t drink to cook with, but this is NOT true. As a general rule, don t cook with a wine if you wouldn t drink it. This dish is a perfect example, because it goes great with the wine you used to cook with. They are a natural marriage and they will balance each other out beautifully!
